Select standard orchards, coffee berries are picked and ripe with over 95% ripeness. The coffee berries are washed, removing impurities (soil, stones, sticks, branches) and poor quality seeds (flat, rotten, crushed, green, …), the ripe berries are then passed fermentation. Spread thinly on the floor and stirred several times a day to ensure that the berries are evenly dried until 12-13% humidity.
